Pasta with hidden vegetable sauce

Hidden vegetable sauce is a great way to encourage children to eat more vegetables. A variety of vegetables are blended into the tomato sauce, and what they can’t see, they can’t pick out! This super-healthy pasta sauce recipe is a simple and delicious way to help your whole family enjoy more vegetables.


Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 1 carrot, chopped

  • 1 cup spinach, chopped

  • ½ cup beans, chopped

  • 1 cup cauliflower, chopped

  • 1 clove garlic, crushed

  • 1 tbsp tomato purée

  • 100 ml vegetable stock

  • 2 cups pasta

  • 1 cup cheese, grated


Method

  1. Heat the olive oil in a pan.

  2. Add the onion, carrot, beans, and cauliflower, and cook for about 10 minutes, stirring occasionally.

  3. Add the spinach and cook for a further 5 minutes.

  4. Stir in the crushed garlic and cook for 1 minute.

  5. Add the tomato purée and vegetable stock. Cover and simmer for about 20 minutes.

  6. Blend the sauce using an electric hand blender until smooth.

  7. Cook the pasta in boiling water according to the instructions on the packet. Drain well.

  8. Stir the pasta into the sauce and sprinkle with grated cheese before serving.
