Spinach Cream Soup

*With chilly weather setting in, nothing beats a warm bowl of soup. This creamy spinach soup is both nutritious and comforting—perfect for the season!
Ingredients:

Spinach (Palak) – 250 g (leaves only, stems and stalks removed and cleaned)

Tomato – 1

Onion – 1 medium

Garlic – 4 cloves
-
Thick cream – ½ cup
-
Butter – 25 g
-
Salt and pepper – to taste

Water – ½ cup (plus extra if needed)
Method:

In a pressure cooker, add the spinach, tomato, onion, garlic, salt (to taste), and ½ cup water.

Cook for 2 whistles.

Once cooled, blend the cooked mixture into a smooth purée.

In a pan, melt the butter and add the spinach mixture.

Let it come to a gentle simmer, then reduce the flame and stir in the cream.

If the soup is too thick, add a little warm water to adjust the consistency.

Do not boil the soup after adding the cream. Heat it just until warm.

Add salt and pepper to taste. Serve hot!

Pair it with warm garlic bread or toasted croutons for a wholesome meal!
