Don’t have the time to soak, grind, and rest traditional dosa batter?
Here’s a healthy and delicious instant dosa batter you can prepare in just a few minutes.


Ingredients

  • 1 cup sooji (semolina)

  • 2 tbsp maida (all-purpose flour)

  • 1½ tsp ginger paste

  • Chopped coriander leaves

  • Chopped green chillies

  • 1 pinch hing (asafoetida)

  • ½ tsp jeera (cumin seeds)

  • ¼ tsp black pepper

  • ¾ tsp salt (or to taste)


Method

  1. In a bowl, mix the sooji and maida.

  2. Add 1 cup of water and whisk well to form a smooth batter.

  3. Gradually add another 1½ cups of water to make a thin, flowing batter.

  4. Add ginger paste, coriander, green chillies, hing, jeera, black pepper, and salt. Mix well.

  5. Let the batter rest for 10–15 minutes.

  6. Heat a tawa, pour a ladleful of batter, spread lightly, and cook until crisp.

  7. Serve hot with chutney or sambar.
