Crispy Sabudana Vada Recipe – Traditional Maharashtrian Snack

Sabudana Vada, a popular snack from Maharashtra, pairs perfectly with a hot cup of Masala Chai! Crispy on the outside and soft inside, it’s a favorite during fasting days as well as evening tea-time.
Ingredients

4 large potatoes, boiled, peeled, and mashed

½ cup sabudana (sago/tapioca)

1 large onion, finely chopped

2 green chilies, finely chopped

2-inch piece of ginger, grated

¼ cup peanuts, roasted and coarsely crushed

1 tsp raw mango powder (amchur)

1 tsp cumin seeds

Salt, to taste

Cooking oil, for shallow frying
Preparation

Soak the sabudana in warm water overnight until it puffs up and becomes translucent.

In a mixing bowl, combine soaked sabudana with mashed potatoes, onion, green chilies, ginger, peanuts, raw mango powder, cumin seeds, and salt. Mix well to form a dough-like mixture.

Divide the mixture into equal portions. Shape each into a ball and gently flatten to form patties.

Heat oil in a wide, flat pan. Shallow fry the patties on medium heat until golden brown and crisp on both sides.

Drain on paper towels and serve hot with tamarind chutney, mint-coriander chutney, and a cup of Masala Chai.
